Y’all, these gingerbread hot cocoa cookies are seriously some of the best I have ever made. This is not an exaggeration! They are like soft ginger snaps, meet chocolate chip, meet hot cocoa, and, unlike any other cookie I have ever made in my life, they are better the next day! I almost couldn’t even believe it, the first time I realized. Cookies are always better fresh, right out of the oven, still a little gooey in the middle. These ones were actually softer the next day! 

More importantly, they were made to taste exactly like my Gingerbread Hot Cocoa, and they really do! My children were amazed at how close the flavors were. It is hot cocoa in a cookie, ready to be made and enjoyed year ’round!

Wondering where you can find the Jet Puffed Mallow Bits? Fair question! They are a little bit obscure, but easier to find than they used to be! I get mine at Wal-Mart, found in the tea and hot cocoa section, usually in the same isle with the peanut butter. Of course, you can always order them online too! They are fun to have handy, not just for this recipe, but for adding to some hot cocoa whenever you want!
